Looking for a simple recipe that can provide the basis for a filling meal? Here's one you can make on a busy day that doesn't require a lot of attention: beef and rice, cooked in a crockpot. This recipe is easy, uncomplicated, and very adaptable to many meal plans. Let's get started.
You Have Time to Cook!
This is a very easy recipe, and you'll get better food than pre-processed. You just need these basic ingredients:
- 2 pounds carne asada (thin-sliced beef)
- 1 15-oz can of diced tomatoes
- 2 cups long-grain rice
- 1 envelope French Onion soup mix
- 1 Tbsp minced garlic (dried or fresh)
- 1 tsp salt (optional)
- 6 cups water
This will cook up in about 2 hours in a crockpot set on low. If you use the high setting, you can shave it down to just over an hour.
- Add the above ingredients to the crockpot, water last, and stir everything together
- Set the crockpot on low or high heat as needed
- Cover, and allow to cook. Stir occasionally to make sure all ingredients are well-combined
This recipe can serve as a main dish, or as a side dish for another entree. The picture at the beginning recipe is one way I like this dish - in a pita pocket. Be careful, since there are juices, you may end up eating it with a fork!
Try using different varieties of rice, spices, or adding other ingredients you like. If you like more spice, add some hot peppers; if you're not much on tomatoes, use other vegetables.
If you enjoy food from the Middle East, you might try making this with lamb, couscous, and spices from that region. This could adapt well to a number of Asian cuisines, too.

The main thing, as always, is that you can have food that's good for you and not take all day making it (unless that's what you want to do).
